According to the matrix, it is less the level of income which influences healthy eating, but more the level of education. This means the less educated are more vulnerable to common ailments associated with poor diets. These include obesity, diabetes, and very high cholesterol which can lead to heart disease. Forget about the ultra rich. They don't fit any model.

Of course the above matrix can be applied to any kind of consumption. Most of us purchase stuff in the Rational Wants quadrant with leanings towards Emotional Wants. This behavior is largely influenced by advertising and promotion, the drivers of capitalism. Perhaps it would make more sense for most of us to stay in the Needs quadrants with emphasis on the Rational.
